Coffee Processing Explained
Washed, Natural, Honey & Anaerobic
Before coffee is roasted, it has to be processed.
Coffee beans are actually the seeds inside coffee cherries. After the cherries are harvested, the fruit needs to be removed and the seeds dried before they can be roasted.
How that happens is called processing, and it can have a significant effect on the flavor of the coffee in your cup.
The main processing methods you’ll encounter are washed, natural and honey. More experimental techniques, including anaerobic fermentation, are also becoming increasingly common.
Why Does Coffee Processing Matter?
Processing can influence:
- Sweetness
- Acidity
- Fruit character
- Body
- Clarity
- Fermentation characteristics
- Overall complexity
But processing isn’t the only factor.
The final flavor also depends on:
- Coffee variety
- Origin
- Altitude
- Climate
- Producer
- Roasting
- Brewing
Think of processing as one important part of the coffee’s story, rather than a guarantee of how it will taste.
Washed Processing
Washed coffee is sometimes called fully washed coffee.
In the washed process, the outer fruit is removed from the coffee seed relatively early, and the coffee is then fermented and washed before drying.
Because much of the fruit is removed before drying, washed coffees are often associated with a cleaner and more precise cup.
Washed coffees can often emphasize:
- Clarity
- Acidity
- Origin character
- Floral notes
- Fruit
- Clean finish
Try washed coffee if:
You enjoy coffees where the characteristics of the origin and variety are easy to distinguish.
Natural Processing
Natural processing takes a different approach.
The coffee cherries are dried with the fruit still surrounding the seed.
As the cherries dry, the coffee can absorb characteristics from the fruit.
Natural coffees are often associated with:
- Fruitiness
- Sweetness
- Fuller body
- Berry characteristics
- Fermented or wine-like notes
The exact result depends on the coffee and how carefully the drying process is controlled.
Try natural coffee if:
You enjoy sweet, fruit-forward coffees with pronounced character.
Honey Processing
Despite the name, honey processing doesn’t involve honey.
After the coffee cherry is pulped, some of the sticky fruit material called mucilage is left on the coffee while it dries.
That mucilage is sometimes referred to as “honey,” which is where the name comes from.
There are different degrees of honey processing, depending on how much mucilage remains.
Honey coffees can offer a combination of:
- Sweetness
- Fruit
- Body
- Acidity
- Clean flavor
They can sit somewhere between the characteristics commonly associated with washed and natural coffees.
What Is White Honey Processing?
White Honey is one variation of honey processing.
Generally, more of the mucilage is removed compared with other honey-processing styles, leaving a relatively smaller amount on the seed during drying.
The result can be a coffee with sweetness and body while retaining a relatively clean profile.
Tanat El Vapor
Tanat’s El Vapor from Costa Rica is an example of a White Honey processed coffee.
It uses the Catuai variety and comes from the Tarrazú region at approximately 1,900–2,100 meters.
Its listed profile includes:
- Raisin
- Chocolate
- Praline
- Medium acidity
- Silky body
It is roasted specifically for espresso.
What Is Anaerobic Processing?
Anaerobic processing has become increasingly popular in specialty coffee.
“Anaerobic” means without oxygen.
Coffee cherries or coffee seeds are placed in a controlled environment where oxygen is limited or removed during fermentation.
The producer can carefully control factors such as:
- Time
- Temperature
- Fermentation conditions
- Pressure
- Microbial activity
This can create distinctive flavors and aromas that are quite different from traditionally processed coffees.
Anaerobic coffees can sometimes have pronounced:
- Fruit
- Wine-like characteristics
- Sweetness
- Fermentation notes
- Complexity
But anaerobic does not automatically mean “better.”
It’s simply another tool producers can use to develop a particular coffee.
Tanat Hacienda La Papaya
Tanat’s Hacienda La Papaya from Ecuador is a good example of an experimental processing approach.
It uses the Improved Typica variety and undergoes 120 hours of anaerobic fermentation.
The resulting coffee has tasting notes of:
- Black cherry
- Red grape
- Milk chocolate
It has medium acidity and a silky body and is roasted for espresso.
This is a great example of how variety + processing + origin + roasting can create a very distinctive coffee.
Processing vs. Roast
It’s important not to confuse processing with roasting.
Processing happens at the coffee farm or processing facility.
Roasting happens later, at the roastery.
For example, a coffee can be:
Costa Rica → Catuai → White Honey → Medium Roast
Each part tells you something different about the coffee.
- Costa Rica = origin
- Catuai = variety
- White Honey = processing method
- Medium Roast = roasting approach
All four can influence what you ultimately taste.
Can You Taste the Processing Method?
Sometimes, yes.
Experienced coffee drinkers may be able to recognize characteristics associated with different processing methods.
But you shouldn’t assume:
Natural = fruity
or
Washed = acidic
or
Anaerobic = funky
Those are tendencies, not rules.
The producer, coffee variety, growing environment, processing details and roasting all matter.
